It’s Easy Being Green

Ingredients 1 cup (235 ml) brewed chamomile tea 1 cup (30 g) fresh organic spinach ½ cup (75 g) seedless green grapes ½ cup (42.5 g) pineapple, frozen ¼ medium organic green apple 2 tablespoons (30 g) hemp protein powder 1 teaspoon ground chia seeds 1 teaspoon chopped fresh cilantro Fresh lime juice, to taste

YIELD: 1 Smoothie

You may be wary of green-colored drinks, but believe me when I say this refreshing smoothie will go down easy. Pineapple and grapes add just the right amount of sweetness to mask the bitter, nutrient-dense greens, and cilantro and lime add a touch of fresh, clean flavor to this classic.

In a blender, combine all the ingredients and blend until smooth. Pour into a tall glass and enjoy cold.

Creamy Coconut Yogurt

YIELD: 1 pint (475 ml)

Just because you’re giving up dairy during the program doesn’t mean you should miss out on the health benefits of yogurt. This coconut yogurt is naturally sweet and can be enjoyed as a thick beverage or a light yogurt.

Directions

In a saucepan over medium heat, warm the coconut milk just until it starts to simmer. Transfer 1/2 cup (120 ml) to a small bowl and whisk in the tapioca starch. The mixture

will thicken. Add this back to the saucepan and simmer for about 3 minutes, stirring constantly until thickened. Turn off the heat and cool the milk to 90°F to 100°F (32°C to 38°C).

Stir in the probiotics and coconut palm sugar. Pour the milk into a clean pint-size (475 ml) jar. Place the jar in a dry cooler at room temperature and let ferment for 12 to 24 hours. Then refrigerate for at least 6 hours to chill. Serve cold alone or with fresh berries or granola. Use within 1 week.

2 cups (475 ml) organic unsweetened coconut milk (homemade or purchased) 2 tablespoons (15 g) tapioca starch (tapioca flour) 4 probiotic capsules, or culture starter 2 tablespoons (18 g) coconut palm sugar

Face Exfoliants

Exfoliation helps remove dead skin from the surface to reveal glowing and vibrant skin. It’s important not to over exfoliate because it can scratch and inflame your skin, as well as damage your skin’s microbiome. Avoid abrasive mechanical and chemical exfoliants; instead use these DIY exfoliant recipes, ensuring the finished texture is smooth, not gritty.

If you’re a Heath- or Emmett-type (see pages 26–28), exfoliation may be too irritating for sensitive or inflamed skin. If the skin on your face is dry but not inflamed, some exfoliators will be great for you to use. Amber, Olivia, and Sage skin types (see pages 23–30) will love the following exfoliant recipes. You can use these every three to seven days during the two-week program, and afterward if you choose.
